I love this so much. I fell in love with BBQ watching these same type of videos. Being in a wheelchair I was super intimidated even trying it and wasting time, money, and food. I went to Terry Black's in Dallas and I took a pit tour and was asking the same questions about wood selection etc like u and all I got was "depending " or "don't no" I was a little disappointed but food was great.

I really need to go back to Franklins. Coincidently I've been wearing a t-shirt from there today. I've had two pit tours. First time was by Aaron when they had trailers right before he brought over the third 1000 gallon pit and the second time was in the pre-fire pit room. That was that hottest place, inside or outside, I've ever been in.

LOL…I get ticked off when I have to get out of bed at 3 am to check the fire. But then, the most I have ever cooked for was 25 and it was fun. No 24 hour shift for this old man. I did that enough of that as a younger man dealing with cattle. You pit master's rock the house. Nothing but respect for what you all do. To top it all off, you have no secrets. You share everything!
We stopped by terry blacks in lockhart. I immediately went to the pits, talked to the guys for a while.

I Would love to see some John Lewis break down videos, Since he was Aaron Franklins helper back in the time. John Lewis seems so Low Key and anonymous after he moved to Charleston.
Also some Goldees breakdown videos, for new fans to BBQ Goldees is big now, i wanne know if they are rly good, cuz i feel like Jirby is so hated from the old school guys?
Also Steve Gow Long Hold Brisket videos, is the Long hold rly nessesary?
Last, Competition BBQ vs Resturant BBQ vs Backyard BBQ? or just 2 of them. Im not a fan of Competition bbq, i rly try to understand them, their food dont look so appealing and they seems to go for the "perfect look" over taste and flavour?

For me who found BBQ just in early 2023, the Goldees video by Alvin Zhou. He catched BBQ world so perfectly with perfect edit, the whole video was so enjoyable to watch.
Also smokepoint, Ant bbq and Steve Gow. But that Goldees video by Alvin i have watched sooooooo many times <3
I live in Norway, so bbq is not so big here. I got 5 kids, so Pellet smoker is what i own, and i can proudly say i can smoke some darn good briskets, I do got happy customers, but i only do that once a week, preordered and prepaid. Brisket prices here is crazy, Choice grade imported from US 50$/kg or 23$/lb. The BBQ joints here sell finish product for 240$/kg or roughly 110$/lb
I almost went for the Workhorse 1975, the only known offset for sale in Norway, cost 6000$. But with 5 kids, i pulled the trigger on the Pitts and Spitt 2000 pellet smoker used for 2500$, new cost 5200$ in Norway.
I Love BBQ , thats when I relax nowdays. I never want to do it everyday, but I would love to do pop ups and stuff. HAPPY SMOKING U ALL <3 ENJOY IT!
