Today I am making cheesy ground beef enchiladas my favorite way, baking in the oven. The homemade enchilada sauce gravy and the cheese make this a baked comfort food my family loves. I am also making a pan of Mexican rice and a salad to make this a delicious enchilada dinner.

INGREDIENTS
1 lb ground beef (I used 97/3 lean to fat ratio)
1/4 cup diced onions
2 garlic cloves minced
1/2 tsp ground cumin
1/2 tsp salt
pepper to taste
14 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz cheddar cheese (or Colby jack cheese)
ENCHILADA RED SAUCE INGREDIENTS
1/4 cup oil
4 tbsp all purpose flour
2 Tbls chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 Knorr brand chicken bouillon cube
2 cups (16 oz) water
**You can substitute the bouillon cube and water with
2 cups of chicken stock or broth
**If using chicken broth, be sure to adjust salt and seasoning to taste
**Bake in a 9×13 baking dish
**Preheat oven to 375 degrees F
**Bake covered for 20 minutes and then uncovered for 10 to 15 minutes.

To make the tortillas pliable: you can also dip them in chicken stock.
I’m looking for the perfect authentic beef enchiladas recipes. I understand most don’t include meat, but I’m looking for those that includes meat. Thank you for your video.
Love the recipe, but can anybody explain as to why my corn tortillas are hard on the bottom? After taking them out of the oven and letting them cool (5-7 mins), I serve them but many of the enchiladas are hard/chewy on the bottom? I've tried adding a bit of the sauce on the bottom before placing them in the pan to no avail. Any ideas?
This looks so good, I have a broken shoulder and in to much pain to cook tonight. Does it have to have onions though ? I am allergic too them

Why do you use chicken stock/broth instead of beef broth? I don't understand the mixing of ground beef with chicken broth.
I do a lot of dinners for several elderly people, I wonder if these Enchiladas could be assembled and frozen, then when ready to serve add the sauce and cheese and bake? I try to offer a few options and this would make this so easy if a couple wanted them for dinner and others wanted chicken for example

This was delicious. I added tomato paste to the sauce for the color, mine looked brown without it.

I wil be definitely going to be making these as soon as I get all the stuff to make them. It looks delicious and very easy to make bet it will be good cuz I like everything in them. I would had jalapenos and sour cream and tomatoes too spice my up and use Mexican cheese. Thanks for the video and recipe look forward to eating them.
