Wouldn’t it be closer to wet aging? Making the meat have a weird flavor after a long time. I love experiments, even if they go wrong, but this one I don’t trust to much.
man they just keep on finding dumb and dumber ways to eat a piece of steak.. would be easier to get a fresh piece of meat and cook it right away. you get a bigger steak and dont have to wait to “dry age” it just to eat a smaller piece of meat

Those are scotch fillets not rib eyes… there is no bone in them.

humans have gone too far
It's the best ribeye steak I've seen so far. It is not too much fat and just the right amount of marbling.
how would you compare the flavor to a regular dry age?
