Bhuna Beef

Ingredients
Onion chopped 2
Tomatoes chopped boiled 4
Ginger garlic paste 1tsp
White pepper 1tsp
Roasted cumin 1tsp
Whole spice 1tbsp
Salt, pepper as required
Sugar 1tbsp
Clarified butter ½ cup
Ingredients for stock
Beef 750gm
Onion 1
Salt 1tsp
Bay leaf 1
Whole spice 1tbsp
Ginger garlic 2tbsp
Fennel 1tsp
Coriander 1tbsp
Cumin 1tsp
Coriander chopped as required
Lemon slice as required
Ginger sliced to garnish

Method
In a pan add beef and stock, cook till 1 cup stock left and meat tender, now sieve stock and set aside , also remove beef, heat clarified butter in a pan fry onion and whole spice and fry , now add ginger garlic paste, chopped tomatoes , salt, pepper, sugar and cumin , now add beef and stock simmer for 15 min , lastly sprinkle coriander and add lemons and serve .

Spicy Raita Dip

Ingredients

Onion chopped 1
Cucumber 1
Green chilies 2
Coriander 2tbsp
Mint 2tbsp
Chaat masala 1-1/2 tsp
Black pepper crushed 1tsp
Yogurt 1-1/2 cup
Mayonnaise 4tbsp
Salt as required
Cumin 1tsp

Method
Mix all and serve.

Nutty Lemon Rice

Ingredients:
Boiled rice 1 bowl
Butter 4 tbsp
Oil 4 tbsp
Mustard seeds 1 tsp
Curry leaves 10-12
Cashew nut, raisins ¾ cup
Peanuts 2 tbsp
Crushed ginger 1 tsp
Asafoetida 1 pinch
Lemon juice 2 tbsp
Green chilies (strips) 3-4
Lemon slice 5-6
Green coriander ½ bunch
Chicken stock ¾ cup
Turmeric ½ tsp
Salt to taste
Whole red chilies 8-10

Method
Heat butter and oil then fry mustard seeds, whole red chilies, crushed ginger, asafoetida and curry leaves in it. Then add green chilies strips, chicken stock, turmeric, lemon juice and salt and cook until boil comes. Now add rice and lemon rice mix well and let it simmer. Then fry cashew nut, raisins and peanuts in 1 tbsp oil. Now take out in dish and garnish with fry dry fruits and green coriander.
