You have def embraced your new home with all these Carolina cooks you have been doing. Nice
I would suggest throwing some red pepper flakes. I'm born/raised ENC and I was always firmly directed to go heavy with ground black pepper and red pepper flakes when doing a mop sauce. I actually even use red pepper flakes when I'm doing my brisket the CENTEX way on an offset.
Nice brisket trim. Chuds would be proud.
ENC BBQ is mostly fine chopped whole hog that was cooked directly over hardwood coals, very rarely will it be pulled pork. I still love this video and will try in on my PBC. Keep the great content coming. I still need to try the tajin pork rib recipe. You rock it!
Interesting video, I have not seen anyone use the pit barrel without the two hanging rods to help control the temp. What do you think the cooking temp was during the cook? Looking forward to more content in 2025.
