All good tips but I'd like to mention one thing; the water bowl isn't only to moisturise the meat it also catches smoke particles and holds them down on the meat.
I'm not an expert and I don't play one on TV.
I tried cooking without the middle section. Just the lid and base. I used a knockoff "vortex ring" I made from a steel duct, placed in the centre, and cooked around the edges. Just 6 coals kept it at over 300f easily. I'll do that again for small cooks
Great tips thanks. Just wondering if you have any issues with losing temperature or smoke from the front hatch not sealing properly? The ones I’ve looked at don’t seem to close up properly with just the one central latch on the hatch.

I never considered the fat absorber acting as thermal mass too. I'll give that a go.
