Pickle poppers are one of my favourite things to BBQ, similar to the jalapeno poppers but using a dill pickle. These ones I have wrapped in bacon, used brisket instead of cream cheese and made a Big Mac inspired dipping sauce.

Main Ingredients:
11 large dill pickles (halved and hollowed)
22 slices of streaky bacon (thin sliced)
11 slices of cheddar cheese (sliced into 4 even strips)
250 grams (8.8 oz) of coarsely ground brisket and chuck
200 grams (7oz) of shredded mozzarella cheese
½ a brown onion (diced)
1 teaspoon of kosher salt
1 teaspoon of coarsely ground black pepper
1 teaspoon of garlic granules

Sauce Ingredients:
½ a cup of mayonnaise
¼ cup of yellow mustard
¼ cup of ketchup
2 tablespoons of gherkin relish
