Ingredients:
For the Marinade:
1 large spoonful of tomato paste or hot pepper paste (choose your fighter)
1 spoon of plain yogurt (Yes, itâs the magic move)
Juice of one whole lemonadeâs worth of lemons (2â3 lemons)
A generous drizzle of only-the-best olive oil youâve got
A squeeze of honey (sweet like you but with consequences)
Garlic â measured by the handful (yes, handfulâdonât get shy now)
Seasonings (go heavy or go home):
Paprika
Chili powder
Coriander
Cumin
Parsley flakes
Turmeric
Salt (hit it after the meatâs laid out so you control the chaos)
Main Stuff:
Bone-in chicken thighs & drumsticks
Russet potatoes, chopped like your ex's excuses
Salt (again, straight on the meatâprecision is power)
Instructions:
Marinate like a maniac. In a bowl, dump in tomato/hot pepper paste, yogurt, lemon juice, olive oil, honey, and enough garlic to make vampires cry. Add your seasonings like youâre casting a flavor spell. Mix until it looks like spicy lava.
Potato layer. Lay your russet chunks on a sheet tray like you're building the foundation of greatness.
Chicken on top. Place thighs and drums over the potatoes. Salt them directly for max flavor control.
The marinade massage. Pour your garlic-packed marinade over everything. Use your hands and massage it in like it owes you money.
Bake it to glory. Slightly cover the tray with foil.
Bake at 375°F (190°C) for 30 minutes.
Uncover and bake another 20â30 minutes till itâs crispy, juicy, and seductively golden.
Optional Garlic Drizzle (Double down if you're built for it):
More garlic (minced like you mean it)
Oil
Optional: dried chili sticks
Lemon juice
Cilantro (chopped like a boss)
SautĂŠ the garlic in oil till golden. Toss in chili sticks if your stomach signed a waiver. Add lemon juice, kill the heat, and drown it in cilantro. Drizzle this hot mess all over your chicken.
