你好,我是 J頓飯好好吃 / 的JJ,歡迎來到我的頻道@foodhow_jj ! 最近在追韓國的黑白大廚,晚上看美食節目實在是煎熬啊,真的是越看越餓。 節目裡面黑湯匙廚師 #隱藏天才 的橄欖油香蒜義大利麵雖然是最簡單的義大利麵,但他獨特的煮麵方式,讓麵條的口感超好。我記得我煮義大利麵的時候,有時會因為炒義大利麵的底料速度比較慢,導致煮好的義大利麵有時候會黏在一起。黑湯匙廚師真的很厲害,用了他的方法,再也不用擔心麵條的口感了。 而且我還找到了白種元老師的食譜,果然是國民廚神,竟然用蔥花代替一般使用的巴西里。其實要取得新鮮的巴西里不是很容易,我都是靠自己種(不是綠手指,不要輕易嘗試,我已經種死過好幾盆了😭),沒想到用蔥花來替代,也是很對味,使用身邊常用的食材也可以做出美味的料理,真的是厲害啊。 今天就來復刻一下這道料理,喜歡義大利麵的一定要試看看。 也記得去看黑白大廚喔,看完就會燃燒起料理魂了😄。 食物小知識 / ・ 橄欖油蒜香義大利麵,是最經典的義大利麵,裡面只有用到蒜頭、巴西里和辣椒,用料非常簡單,被稱為窮人的義大利麵。不知道你有沒有發現,這三種食材的配色剛好是紅白綠,很像義大利國旗的配色呢。 食材準備 / ・義大利麵 100g ・大蒜 10瓣 ・乾辣椒 1小條 ・青蔥 少許 ・橄欖油 (拌麵2大匙,炒麵4大匙) ・鹽 (煮麵1小匙,炒麵1小匙) ・起司粉 少許 製作方法 / 1. 辣椒切成圈,蔥切成蔥花。大蒜一半切成蒜片,一半切成蒜末 2. 水煮開後加入義大利麵,煮11分鐘,撈出,趁熱拌入橄欖油,快速放入盤子,並蓋蓋子燜4分鐘 3. 冷鍋加入橄欖油和蒜片,開小火等蒜片變成金黃色後加入辣椒和蒜末,等蒜末變色後,加入義大利麵,並加入3大匙煮麵水和鹽,開大火,攪拌均勻就可以了 4. 義大利麵盛盤,淋上蒜油和乾辣椒,再撒上蔥花、起司粉就完成囉! TIPS / ・ 市售的義大利麵每個品牌的加熱時間都不一樣,包裝袋上都會標明時間,煮包裝袋上面的時間減少一分鐘,撈出後拌入橄欖油,再用餘溫燜4分鐘就可以了。 ・ 如果有巴西里的話會更香,一般家常就用蔥花就可以了。 ・ 這款麵的關鍵是大蒜,用小火,一定不要讓大蒜焦掉,不然會苦苦的不好吃。 source
