Today I’m sharing a traditional chicken mappas recipe with coconut milk and potatoes that is perfect for having with appam this Easter. Try it and let me know how you like it!
Ingredients:
1 ½ kg (3.3 lbs) chicken, cleaned and cut into pieces
1 large potato, cut into chunks
3 medium onions, sliced
2-inch piece of ginger, sliced
6 garlic cloves, sliced
3-4 green chilis, sliced
2-3 sprigs curry leaves
½ teaspoon turmeric powder
½ teaspoon salt
1 ½ tablespoons coconut oil for sautéing
2 cups coconut milk
Marinade:
½ teaspoon turmeric powder
1 teaspoon black pepper powder
1 teaspoon salt
1 teaspoon fennel seed powder
Masala:
3 tablespoons coriander powder
1 ½ teaspoons garam masala powder
Water to mix
1 ½ tablespoons coconut oil
2 small tomatoes, chopped
Tempering:
1 ½ tablespoons coconut oil
½ teaspoon mustard seeds
1 dry red chili
2 sprigs curry leaves
Final Seasoning:
1 teaspoon vinegar
½ teaspoon fennel seed powder
½ teaspoon salt
1 sprig curry leaves
