Chicken Resha Kabab (Shami Kabab) – Ingredients
For the Special Shami Kabab Spice Mix
Dry red chillies – 4–5
Cumin seeds (jeera) – 1 tsp
Black peppercorns – ½ tsp
Cloves (laung) – 4–5
Green cardamom – 4
Cinnamon stick – 2-inch piece
Black cardamom – 1
Salt – 1 tsp (adjust to taste)
Red chilli powder – 1.5 tsp
For the Main Mixture
Boneless chicken – 500 g
Chana dal (Bengal gram) – 150 g (approx. ¾ cup, soaked for 30 minutes)
Onion – 1 medium (roughly sliced)
Ginger-garlic paste – 1 tbsp
Bay leaves – 2–3
Water – ½ cup
Dry mango powder (amchur) – 1 tsp
(or lemon juice – 1.5 tsp)
For Binding and Aromatics
Onion – 1 large (finely chopped)
Fresh coriander – 1 small bunch (chopped)
Green chillies – 4–5 (chopped, adjust to taste)
Egg – 1 (for binding)
Cooking oil – 3–4 tbsp (for shallow frying)

    Preparation Steps:-
    * Prepare the Spice Blend: In a grinder, combine the dry red chilies, cumin, peppercorns, cloves, cardamoms, cinnamon, salt, and red chili powder. Grind into a fine powder. This special mix gives the kababs their authentic flavor.
    * Pressure Cook: In a pressure cooker, add the boneless chicken, soaked chana dal, sliced onion, ginger-garlic paste, the prepared spice mix, and bay leaves. Pour in ½ cup of water.
    * Note: Avoid adding too much water to ensure the mixture doesn't become soggy.
    * Cooking Time: Cook on high heat for one whistle, then lower the heat and simmer for 12–15 minutes until the chicken and dal are completely tender.
    * Dry the Moisture: Once the pressure is released, open the cooker. If there is excess liquid, turn on the heat and sauté for 4–5 minutes until the water evaporates. At this stage, add the dry mango powder (or lemon juice) and adjust salt if needed.
    * Shred the Chicken: Remove the bay leaves. Separate the chicken pieces from the dal. For the "Resha" (shredded) texture, manually shred the chicken into thin fibers using your hands.
    * Grind the Dal: Grind the remaining cooked dal and onion mixture in a grinder until smooth.
    * Final Mix: Combine the smooth dal paste with the shredded chicken. Add the finely chopped onion, fresh coriander, green chilies, and one egg. Mix thoroughly.
    * Shape the Kababs: Grease your hands slightly and shape the mixture into round patties. This recipe yields approximately 17–18 kababs.
    * Tip: You can freeze these patties in an airtight container for up to a month.
    * Fry: Heat oil in a pan and shallow fry the kababs on medium heat. Turn them occasionally until both sides are golden brown and crispy.
    * Serve hot with green chutney or as part of a meal with dal and rice. 👍
