This is great! My auntie suggests to fry the chicken instead and season the chicken the night before with creole seasoning, old bay, peprika, Cajun seasoning, gumbo file, salt pepper, etc.. adds tons of flavor! Don’t cook chicken all the way through.

I’m from New Orleans and we put balled up hot sausage patties in ours. You have to almost burn them first to get all the grease out and pat them with napkins. We use chicken gizzards too. BTW I put crab boil in most of my chicken and seafood recipes

Okra is optional. I love it but many I cook for don't. Your recipe is similar to mine. I use chicken stock. I like how you mix your sausage for a more complex flavor.
