• 3 pounds pork belly or pork shoulder, cut into 1 to 1 ½ inch cubes
• 2 teaspoons coarse salt
• 2 tablespoons avocado oil
• 3 teaspoons ground pepper
• 1 peeled, thinly sliced yellow onion, about 1 cup
• 10 finely minced garlic cloves
• 3 tablespoons light brown sugar
• ½ cup soy sauce
• ½ cup white distilled vinegar
• 2 teaspoons fish sauce, optional
• 1 cup chicken stock
• 4 bay leaves

That looks delicious. I personally dont usually put sugar with my adobo, but if ever I put, I will also add some red chilis.
Now I suggest, you try to cook adobo without sugar and onion. Yes, no onion, but lots of garlic. With that same amount of pork, use atleast three heads of garlic.

Adobo is a reliable dish whatever weather you have. You can also cook that with chicken, fish and pork. Also, you can add eggs and potatoes as well.

Hard setting with 1/4 less water = perfect stir fry rice with no refrigeration.

Always love a good pork belly/shoulder recipe. It's half the price of even the cheapest cuts of beef where I live.
The best pork I ever had was – hands down and no competition – in Chengdu. Dang, these chinese know how to cook pork belly.
