– Penne Pasta (1 box)
– 1 tbsp olive oil & 1 tsp salt, to water
– 4 tbsp butter or olive oil
– 8 oz. pkg sliced mushrooms
– 1 pkg. grape tomatoes (halved)
– 4 cups baby spinach
– Salt/Pepper to taste
– 2 tsp minced garlic
– 2 tsp Italian seasoning
– 1 Cup whole milk
– 2 Cups heavy whipping cream
– 1 Cup grated parmesan cheese
– Top with Parmesano/Rogiano shredded cheese

Hi Rose! My family loves this recipe however I am having trouble getting the pasta to absorb the sauce. I’m not sure if it’s the whole milk or heavy whipping cream I’m using. I have to use special stuff because I’m allergic to the hormones found in general dairy. So I’m not sure if it’s because of that or not. I’ll also try and add the tomatoes in after because I feel like the juices make it runny
