Disability-Friendly Chicken and Dumplings *Recipe in Description Box*
Disability-Friendly Chicken and Dumplings
2 cups frozen onions
2 lbs chicken breasts
2 cups chicken broth
1 tbs chicken bouillon
2 tsp poultry seasoning
1 tsp dehydrated minced garlic
1 tsp parsley
1/2 tsp black pepper
4 tbs butter
1 can cream of celery soup
1 can cream of chicken soup
12 oz bag frozen peas and carrots
1 can refrigerated biscuits*
Place onions, chicken, seasoning, broth, soups, and butter to a crockpot. Cover and cook on high for 3 hours.
Remove peas and carrots from freezer and allow them to thaw while the chicken cooks.
Shred chicken and stir in peas and carrots and biscuits.* The biscuits can be added whole or cut into pieces with a pasta wheel or a bench scraper if desired. Add the biscuits to the mixture and continue to cook for an Additional 1-2 hours or until the dumplings are cooked though.
*Note:
If opening a can of biscuits is inaccessible, refrigerated puff pastry or pie crust can be used instead.

I have just had this for dinner (minus the pepper seasoning – severely allergic), and I used my Nonas homemade meat- pie crust pastry as no shops here have heard of biscuits like what you are using….
This took me more than half the evening to prepare – my medical temperature, PTSI, peripheral neuopathy, blah blah alert cat (yep… Cat, Sheema aka 'Litte Miss Pervert' and yep legally and medically certified). She kept checking my temp and my peripheral nerves (from waist to foot). Hence, it took me 4 hours to get from start to lid on and start.
And yep, I babble when I'm in pain….. sorry.
When I got to finally scoop out a couple of spoonfuls and (once Sheema did her check over), put the side table over my w/chair and burst out crying with each mouthful. I can not remember enjoying chicken so much in so long – it was delicious!

I don't consider myself disabled but I enjoy cooking and love learning new way to cook favorite foods. This would be useful for someone in recovery, whether from illness, injury or surgery. This way you can get something tasty with little work
Do you have a website where you post these recipes? If not I would really recommend creating one! It would be good to have a place where all of these are easily accessible and findable.

All you’re doing by washing your chicken is blasting salmonella all over the sink and possibly kitchen. The bacteria dies when you cook the chicken. No need to wash it

Can I ask why people wash their chicken? I didn't grow up with people who do and internet wasn't really telling people about it when I was a kid so now I'm feeling like I missed something here???? I pat my chicken with a paper towel to get some of the slime texture off but thats it

Please note that the cooking process is what makes the chicken safe to eat ( by killing the bacteria ). Washing the chicken can actually spread the bacteria. Just wanted to let you know ❤

Please don't wash your chicken; organizations like the FDA, USDA, and CDC recommend against it. It maximizes the opportunity for salmonella to be spread around your kitchen, for minimal benefit.
Apparently you can open the biscuits with a can opener (can be automatic)

This looks so good! One way to make this even more accessible is to use flour tortillas instead of biscuits. They soak up all the brothy goodness and honestly taste so similar to legit dumplings!

I love dumplings but i can never figure out how to mix them, been planning on trying biscuits next time i make soup ❤ also, if you have trouble squeezing the can you can press the back of a spoon along a seam to get it to pop. Did it all the time as a kid 😂
