Those are definitely strip steaks, not sirloin. The sirloin comes from the loin in front of the round(rear), while the strip steak comes from the rear of the short loin, before it joins the sirloin. These are center cut strip steaks. Still very good quality, just a technical difference.
There is also a large amount of crust on the top of the griddle from the previously cooked (smash burgers it looks like) or whatever u cooked. Gotta clean that off to even the temp, because one of the steaks tallow side you had trying to cook on the crust.
You also cooked them on a flat top grill. You have regulate and check the temp on the griddle surface to make sure they were both the same temp surface.
"Protein Press"?… sounds like someone fell for a marketing scheme… I have at least a half dozen items in my kitchen that would accomplish the same thing. EDIT… reading a few comments.. I see you sell this item.. Good for you that there's a sucker born every minute.

I don't have a protein press, but these videos made me improvise one by putting weight (e g. a big can) on top of a ceramic plate.
It's the idiots who push down on the press to speed up the cooking, who make the steak dry.
Just using a pot with water in it to weigh down my steaks .. Don't have to buy a protein press …

Used this press this week first time making smash burgers, they were unbelievable. Itβs a great product
