  1. Those are definitely strip steaks, not sirloin. The sirloin comes from the loin in front of the round(rear), while the strip steak comes from the rear of the short loin, before it joins the sirloin. These are center cut strip steaks. Still very good quality, just a technical difference.

  2. There is also a large amount of crust on the top of the griddle from the previously cooked (smash burgers it looks like) or whatever u cooked. Gotta clean that off to even the temp, because one of the steaks tallow side you had trying to cook on the crust.

  3. "Protein Press"?… sounds like someone fell for a marketing scheme… I have at least a half dozen items in my kitchen that would accomplish the same thing.
    EDIT… reading a few comments.. I see you sell this item.. Good for you that there's a sucker born every minute.
