I have to admit that I experiment a lot with different binders. Currently, what I and my family and assorted moochers seem to like best is using Jim Franklin's Original BBQ sauce as a binder. After that it's just Adkins Rub. And wiping the meat with more Franklin's once or twice during the cook.
Usually I don’t use a binder as long as the meat is moist ❤

I use Better than Bouillon mixed with water as a binder and an added layer of flavor.

Every youtube video I've watched always goes too high in temperature with beef back ribs. There isn't much meat on them. The bones transfer a lot of heat to the meat.
My wife, who isn't particularly fond of yellow mustard, can identify mustard, as a binder, every time I use it, even when she wasn't around for the cook.
Team mustard. My local Walmart and a few Spanish markets around me sell beef back ribs. Cheap and easy cook🤘🤘
