Ingredients for Prime Rib Recipe:
7 lb Beef Prime Rib, bone-in (aka Standing Rib roast) – you can use larger or smaller roasts
Salt (I used fine sea salt)
1/2 Tbsp black pepper, freshly ground
1 tsp rosemary leaves (from 1 sprig) or 1/2 tsp dried rosemary
1/2 tsp fresh thyme leaves (from 1-2 sprigs), or 1/4 tsp dried thyme
6 garlic cloves, finely chopped
3 Tbsp olive oil

I ABSOLUTELY LOVE the garlic herb rub used for this recipe. But after much research and for my taste, the BEST outcome for an even, overall medium rare-ish to rare prime rib,.. that has NO gray or darker full done outer parts/areas of the roast,.. is to do whats called a REVERSE SEAR. Starting with a room temperature roast of at least 3-4 hours,.. (24 hours is preferable), then in the oven at LOW temp of 250 degrees for 3-4 hours ( est of average size roast) and reaches inside temp of 120 degrees,. then remove from oven, then cover with the desired rub mixture. THEN back in oven and seared at 500 degrees for 10-15 min. to achieve the golden crust. It doesnt have to rest after it comes out oven for the longer time, because the "resting has taken place because of how slow it is cooked. It comes out from edge to edge your fully desired medium rare with no overcooked areas. Its juicy and perfect!
