For our garlic & Beef lovers! A classic beef roast stuffed with copious amounts of fresh garlic. Roasted with a variety of root vegetables in a cast iron potjie. Sliced and served with “stampmielies” (samp) and gravy. Perfect for a Sunday roast.

*The Roast must ideally be cooked to Well done(Not dry) for the garlic to be milder.

Recipe
∙ 2kg Beef Roast (I used Beef hump)
∙ Olive oil
∙ 3 onions
∙ 5 carrots
∙ 7 Potatoes
∙ 3 Garlic bulbs worth of cloves
∙ 1 Garlic bulb
∙ 1 teaspoon fresh Rosemary
∙ 1 teaspoon fresh Thyme
∙ Salt & Pepper

Gravy
∙ Rendered drippings from roast (½cup)
∙ 1/3 cup flour
∙ 1 beef stock cube
∙ 1 teaspoon white pepper
∙ Hot water
∙ Salt to taste

Stamp
∙ 1½ cup Stampmielies (samp) Soaked overnight
∙ 1 teaspoon salt
∙ 5 Cups Hot water
