Great recipe, but your video technique, jerking the camera around, is very disturbing and a bit nerve racking. You should leave the camera in place and keep it simple like Chef John from Food Wishes. It's hard to focus on what you are doing. I think you videos would be much more pleasant to watch.

With all due respect and yet criticism at the same time, "lightly boiling" as stated 59 seconds into the video, IS NOT poaching. Lightly boiling is simmering AND YOU KNOW THAT. Someone of your "stature" should have enough courtesy/honesty/integrity to teach others correctly as they adore you and its surely not right for them or anyone to learn something "WRONG" ESPECIALLY from you when you know better. From your words here, they may NEXT proceed to "poach" eggs for instance and they will fail miserably because of your words concerning how to "poach" concerning water "action." Is that how you pay back humanity? Again, no disrespect intended. Just do/say what is right, for all other's. Is it not that which matters most, for God first, family second, all others third and thyself last?

And then just remember how much of a cost does good wine for cooking add to the dish… Of course it's tastier, but is it worth it? I think no, only if it's for a celebration…
