  1. Can we please talk about Bay Leaf. As a former chef's assistant, I am still mystified by it. The subtle flavor is lost on me and honestly, if something is missing from a fish, bay leaf is way down on the list of possible suspects. Please school is on this.

  2. Boiling such a fine steak to death like that is a ✨crime✨ 💀
    Instead: sear steak medium rare, let rest, reduce soup in pan where steak was seared, slice juicy steak, add to bun with pickled veggies, drizzle over thickened sauce … Perfection.

  3. Love most of it, looks delicious. However, I do not want my Italian-American food to taste like jalapenos. The peppers are so present and ubiquitous at this point that everything starts to get the same flavor overtones.
