Can we please talk about Bay Leaf. As a former chef's assistant, I am still mystified by it. The subtle flavor is lost on me and honestly, if something is missing from a fish, bay leaf is way down on the list of possible suspects. Please school is on this.

Nothing beats a real Chicago beef. Turano bread. Never toasted. Maybe sauteed bell peppers and gairdiniera for a little spice. Never jalapeños.

Love most of it, looks delicious. However, I do not want my Italian-American food to taste like jalapenos. The peppers are so present and ubiquitous at this point that everything starts to get the same flavor overtones.
I have tried the version where they use the pickled pepperoncini and juice – I did not like that at all. I think I would like this a lot better.
