How much water to use:
• When cooking 454 grams (1 lb.) of pasta, you want to use at least 4 liters/quarts of water, up to 6 quarts of water.
o Plenty of water will dilute the starch and will prevent your pasta from sticking (do not add oil to your pasta water – there is no need, and further, it negatively impacts your pasta)
o Plenty of water retains heat better and allows for even cooking (no crowding)
