đ Brine overnight with lemons, Oranges, Apples, Brown Sugar, Salt, Cinnamon, and Thyme.
đ I used bearandburtons W Sauce as a binder
đ Then use your favorite BBQ Rub
đ Using Twin TempSpike I stuck the probes in the thickest part of the tail.
đ In the smoker at 275 degrees spritzing with every 30 minutes with 50/50 Apple Juice and Worcestershire Sauce.
đ When the Internal Temperature reached 165 degrees I painted on BBQ sauce and let it tack on for 30 minutes.
đ This cook took roughly 6 hours and I let the Alligator rest for 30 minutes!
