  1. I also found that I get better results cracking the eggs on a paper towel folded in half. I think its because it's a slightly softer surface than directly on a cutting board or counter that allows the shell to crack more evenly; I don't know. Plus, its easier clean up having the egg whites go on the paper towel.

  2. I use my bare hands to separate the yolk. Just let the white flow through your fingers.

    When I feel like impressing people, an empty clean water bottle (I use Nestlé Pure Life) will suck up the yolk with style and grace.

  3. Thanks, ATK and Elle! I've seen experienced chefs do this. My attempt in the past didn't work so well (the eggshell cut the yolk open), but now that I know it's easily masterable I'll try again. I'm planning on using the eggshell trick from now on if it works for me. I've spent way too much time trying to fish eggshell pieces out of my eggs with a stainless steel spoon.

  4. Should we be concerned about how clean the outside of the egg shell is? I've seen some that don't look very clean at all. I definitely wouldn't want to dip it into anything I would want to eat.
