First time see the root of fennel
I made this tonight with pork steak and corn on the cob. I could eat it this salad every day for the rest of my life!!! I ran out of mayo so half mayo and half nonfat Greek yogurt. And I'm hypoglycemic so I used golden monk fruit instead of sugar. This was so delicious that I ate more after dinner instead of dessert! Thanks Julia!

Exciting! I mostly eat fennel bulb stir-fried with potato and onion, so I've been trying to find ways I like it fresh. I recently tried a recipe for fresh fennel and orange salad, and I was just kind of underwhelmed. I'm allergic to apples; can you think of something that might be a suitable replacement? Maybe jicama for crunchiness? I've only had that once and don't remember what I tasted like. Maybe Asian pear would be better!
