One of my favorite item to get from a Chinese BBQ restaurant is crispy pork belly! The crunch the juicy fatty pork, I love it! Here’s my recipe on how to make crispy pork belly from home and it is surprisingly simple!
Ingredients:
1 – 3 Pound Pork belly
1 tbsp Chinese cooking wine
1 tsp salt
1 tsp sugar
1 tsp white pepper
1 tsp five spice
Rice vinegar
Baking soda

OMG. This looks incredible! It's my 50th in a few weeks and I'm having a 3 day booze and food fest at my mates house, and I will definetly be doing this!!!
I achieved good results without drying overnight!
If you're like me, and almost never plan meals the day before, you can use something to dry out the pork belly (I used a high power car blower, which is basically a tiny leaf blower), but I'd be curious to try a blow drier on cool setting.
It still crisped up beautifully and was delicious, so worth a try if you're impatient 😉
This looks amazing. I got my slab of pork belly marinating and drying in the fridge as I type this! Can't wait to pop it in the oven!!

Comeing from my experiance, we actually have a similar thing where we would slice open the skin in a cross pattern. Soak, Salt roast and enjoy an airy and crunchy skin with sticky an gelatinous fat underneath. Can confirm, make holes in the skin and make liberal use of salt on the skin.
Btw. we soak the skin in water beforehand, so the water puffs up the skin while roasting.
i like pork belly but unless you're roasting it, the fat is hard to chew. normally i get pork shoulder or butt roast since you're getting a lot more meat for your money, and it's less greasy. belly has popped up at kroger but it's never a consistent item there, not sure why it comes and goes so much. when i want it, it's not there. when i'm not looking, it;s there. so i buy it whenever i see it and collect it in the freezer.
Reduce the 5 Spice by a quarter and youll be golden. Usually the ratio of salt to 5 Spice is 1:6!!! And the salt ratio to meat weight is 1:10. Good luck! 🙂
