He’s wrong you shouldn’t cook meat straight from the fridge it’s more relevant with steaks but the concept still occurs, if you’re forcing something to jump from fridge temp to cooked so rapidly the texture isn’t as buttery soft, you can tell the difference when you cut into the meat. If there is a grey ring around the circumference it wasn’t left to raise to room temp. You get that beautiful slow transition from the charred outer layer to the pink in the middle with room temp. Not a pronounced jump from grey/black to pink.
Don‘t promote seed oils. Very bad for ur health. Please do adequate research even when giving causual instructions. Especially when giving personal recommendations, someone watching ur channel (person willing to learn) will take your info as fact/good. Inform yourself about food better my friend! For the sake of your own health too!! Buy extra virgin olive oil (ORGANIC ONLY)! Yes! Pay the high price!! Don‘t buy the most expensive one. Look online, use ur brain. Look in Toskana or Piemont region. My tip.
