Deep-frying guide
The total deep-frying time is 5 minutes.
For the first three minutes, please deep-fry at 160 to 170°C.
And for the next two minutes, deep-fry at 175 to 180°C.
And let the Tonkatsu rest for 4 mins.
Ingredients for Tonkatsu
2 pork loin chops(pre-sliced ones)3/4 inch or 2cm thick
Salt and Black pepper for seasoning
100g Panko bread crumbs
100g All-purpose flour
1 Large egg
1 tsp cooking oil to mix with beaten egg
Oil for deep frying tonkatsu( I used Canola oil for this video)
Ingredients for Tonkatsu Sauce
2 tbsp Ketchup
2 tbsp Worcestershire sauce
1 tbsp Sugar
1 tbsp water
1 lemon wedge

Back in the late 70s my mother would make chicken tonkatsu. The tonkatsu sauce she would make it herself… Ketchup and soy sauce. Saved her a long drive to little Tokyo in LA.
