It's not "happens to be vegan", you make it sound like its a coincidence. It's vegan because animal products were quite expensive, and so the Commonners created this for eating
You can use whatever you want to put inside. My favourites are parsley-cheese mixture and minced meat one. You can use a vegan minced meat, onions, tomato paste, parsley, paprika and spices.
You need to mix them in a pan and then add it inside the gözleme like you've done for spinach here. And cook it. :3
Oh and I like to add a small peace of butter just before taking it off from the hear, you can maybe use a vegan butter for that. It makes the dish savoury :3 goes well with ayran.
Add some legumes like chickpeas for protein
