Well, this dish is like my business card because it highlights a few ingredients that represent me.

🥔Potatoes, for example, are a staple in 🇯🇵Hokkaido, just as they are in the 🇳🇱 – both the place where I was born and the place I’ve called home for the past 20+ years are represented.

Also, did you know that from the start, beef tataki has been my signature dish?

Over the years I did my best to elevated it more and more.
