Serves: 2-6
Prep time: 10 minutes
Fry time: 4 minutes
Special tools: Cast iron pan

Ingredients:
Shrimp
1 lb black tiger shrimp cleaned, butterflied
1/2 cup flour
1.5 cups tempura batter
1 cup shredded sweet coconut
1 cup panko bread crumbs
1 kosher salt
1/2 litre frying olive oil

Tempura Batter
3/4 cup all-purpose flour
1/2 cup potato starch
1 egg white
1/4 cup vodka, chilled in the freezer
3/4 cup carbonated water, chilled in the fridge

Sweet Heat Sauce
1/2 cup cilantro, chopped
1.5 limes, zested and juiced
1/2 chili, chopped
1 tablespoon green onion, chopped
3 tablespoons honey
1 kosher salt
1 black pepper

Method:
1. Season shrimp and prepare a three-step breading station. Coat shrimp in flour, tempura batter, panko and coconut combo.
2. Shallow fry at 325-350F for 1.5-2 minutes per side.
3. Remove, season, and serve with sweet heat sauce.
