Steamed BBQ Pork Buns (Char Siu Bao ) recipe:
Ingredients:
168g plain flour ( medium protein flour )
4g instant yeast
1/2 tsp sugar
40ml warm water
50ml water

50g sugar
1.5 Tbsp lard or Oil
20g egg white
1 Tbsp baking powder
1/4 tsp vinegar
56g plain flour

Filling for Char Siu Buns : (only use 1/2 of ingredients)
180g diced Char Siu (Barbecued Pork)
20g sliced shallots
1.5 Tbsp oil

240ml water
20g oyster sauce
20g light soy sauce
40g dark soy sauce
100g sugar
1/2 tsp salt
1/2 tsp MSG
1/2 tsp ground white pepper

Gravy :
40g cornflour
80g water
Note: Only use 1/2 of the filling so you only make 1/2 of the ingredients.
If you make it all, put the remaining filling in the freezer for later use.
