    Cook:
    Chicken 8 pieces floured
    2 tbsp (14g) butter, unsalted
    2 shallots or 1 onion, peeled and sliced
    2 cloves garlic, peeled and minced
    1 lb/450g mushrooms/ apples sliced

    Simmer chicken with sauce on low for pressure 20 to 40 minutes
    1/2 cup dry white wine
    1/2 cup dry red wine
    1 TBsp chicken stock
    ½ cup (120g) peeled tomatoes, drained
    2 tbsp fresh parlsey, chopped
    1 tbsp fresh tarragon/thyme chopped

  3. That gravy browning in tomato juice sounds like a great idea, I'll try it soon. If you keep a tube of tomato paste on the go, there's your tomato juice, just add water to thin it, no need to open a big tin.
