BARBECUE CHICKEN PANINI
Ingredients for Chicken
chicken breasts 2 medium
Vinegar 1 tbsp
Mustard paste 1 tsp
Salt ½ tsp
Black pepper ½ tsp
Paprika ½ tsp
Barbecue sauce 1 tbsp
Worcestershire sauce 1 tbsp
Hot sauce 1 tbsp
Oil 1 tbsp
Water 1 cup
Other Ingredients
Panini bread 2-3
Butter 4 ounces
Cheddar cheese grated 4 ounces
Cucumber cut into slices 1
Lettuce leaves as required
Barbecue sauce for drizzle
Chili garlic sauce for drizzle
METHOD
In a pot add all the ingredients above, cook on low flame till water dries and chicken tender, remove from heat and allow it to cool, then cut into thin slices with a sharp knife and keep aside.
TO ASSEMBLE
Cut each Panini bread horizontally, spread each slice with the butter then spread with cucumber and chicken slices on the one slice of the bread, drizzle barbecue sauce and chili garlic sauce, spread with cheddar cheese and lettuce, finally top with the other slice of the bread. Heat grill pan to medium low heat, brush with oil, place the Panini, press for a min, flip the Panini carefully, press for another min, cut it into half and serve immediately.

VANILLA TART
Ingredients for Base
Biscuit crumbs 2 ½ cups
Butter melted 4-5 ounce
Ingredients for Vanilla Filling
Milk 1 ½ cup
Light corn syrup 1 tbsp
Chilled tetra pack cream 4-5 tbsp
Condensed milk 5 tbsp
Corn flour 2 tbsp
Vanilla essence 1 tsp
Gelatin 1 tbsp
Water 1 cup
METHOD
Pre-heat oven to 180, crush the biscuits in a food processer, then add melted butter and mix it till well combined, press mixture on the bottom and sides of the rectangular tart pan with removable bottom, bake for 5 mins, remove from the oven and allow to cool completely.

In a sauce pan mix milk, condensed milk, corn flour, salt and vanilla, whisk to dissolve the ingredients and boil, keep stirring, cook for a min, remove from heat, stir in gelatin mixture with light corn syrup, mix well, cool, add cream and mix well, pour the filling over the crust, place it in the fridge for about 2 hours, decorate with kiwis, orange slices, fresh flowers, enjoy!
