The first time I ever heard of that I thought someone had done lost their mind.
But I made one for someone's birthday at their request, and when I tasted it (reluctantly), I was pleasantly surprised… It was good!
It used to be called the John Glenn Chocolate cake in the 50s
I was using the same ingredients for a mayo and when I realised I just emulsified them, then added the dry ingredients, the result was a more moist and bouncy cake.

You can also use applesauce. Does the same thing as mayo with less fat, which is something I am certain everyone eating chocolate cake is concerned about 😏
