You can use mayo to bind instead of egg. I use it more for kebabs then meatballs. Mayo is essentially fat and eggs and for oven baked kebabs it makes them amazingly moist and they melt in your mouth.

I did something like this but added some cut strips of fresh mozzarella inside the roll. Turned out very good. I made these meatballs and thought they were too dense so I just made my meatballs. Turned out perfect.
