What is that chocolate you are using?
I love the addition of both beef broth and mirepoix.
I do recommend the bacon weave coating. Over and under weaving of bacon strips wrapped around the loaf.
The coating allows for a quicker cook as the fat from the bacon keeps the loaf moist, and the higher temperature crisps up the bacon.

I am loving all these recipes to make use of left overs from brisket trims, to make sausage, burgers and meatloaf and i want to try this at home. However I have a family member with food allergies. What can I substitute for the eggs and milk powder?
Did you check an interior temp before declaring it done since it has pork in it?
