If you take an extra 10 minutes to saute the carrots, onions, celery, garlic and tomato paste then brown the meat you will get 10X more flavor.

I finally have everything to make one of your recipes Melissa! But with all the fat in the chuck roast, there is no need to use a whole stick of butter IMO. I"ll be using half a stick of unsalted butter.
