Question: I just bought the soapstone. Could I do this on that? If not, I guess I want to wait until "Santa" buys the cast iron for me (or I just buy it the day after Christmas…)
Glad you're busy Chef but man we miss you out here more often! Clearly your formula(s) are still working. You're substitution of novel ingredient for traditional is a winner but so is your "simple things done perfectly" is SUCH good advice. Thanks for another way to enjoy that tenderloin!
