Being that I can't eat tomatoes or anything even vaguely close, I'ma do this with a jar or 2 (with juice) of diced roasted red bell pepper. I may need to adjust the amount of water. Thanx for sharing β€

My kids & I were born in Weslaco,Texas 4 miles away from the Border 2 Las Flores now Progreso,Texas 2 next 2 Mexico – but we have being living in Milwaukee,Wi. 4 more than 45 yrs. & each Thurs. do 4 one of my son – co – workers food & I also still do add a little of this & a little of that 4 more than 25 ppl. – each Monday 4 my dau . but there are only 6 persons – they love the chilie w/ beans & meat & cheese enchiladas – so do all of my grown kids & grown kids have 4 – while U all are burning – we are still w/ cold weather so I also do them taco soup – if I donβt have the chicken or beef use the power ones or little blocks not just water & make sure I do have enough donβt like running out of them – when at first we got here they didnβt even had hamburger meat it was Italian meat – but since the lation ppl. started coming so did the food ..

Tried this recipe tonight. Did not think 1 lb of meat and 1 cup of rice would go this far!! Made a large meal for 4. I made the enchilada sauce from your other video and that was excellent. The whole meal was a great trial of this recipe. I think I might use shredded beef or shredded chicken in the future. This recipe is so adaptable. thanks for posting this, it was spectacular.
