One Pan Roast Whole Chicken and Vegetables Recipe – How to Roast a whole Chicken



I love a good homemade roast chicken and this juicy whole roasted chicken in one pan with vegetables is flavorful and tender juicy. How to roast a whole chicken, easy, simple and delicious.

INGREDIENTS

4 to 4.5 lbs whole chicken
2 Tbs melted butter
salt and pepper to taste ( i used 2 1/2 tsp salt and 1/2 tsp black pepper to season the chicken)
1/2 tsp dried parsley
1/2 tsp dried oregano

Stuff chicken with;

1 whole lemon
1 small onion
1 whole garlic head
handful of fresh thyme
3 to 4 sprigs of fresh rosemary
3 bay leaves

for the veggies

1 lb red baby potatoes
3 medium carrots
1 medium onion
1 cup brussel sprouts
4 cloves of garlic
2 Tbs olive oil
salt and pepper to taste ( i used 1/2 tsp salt and 1/4 tsp black pepper)
1/2 tsp dried oregano
1/2 tsp dried parsley
