As I understand it, most "true" Italian cooking is supposed to simple and fresh. Sicilian cooking, I'd imagine, shares the same principle. It's not why I use a lot of fresh ingredience in my own (diabetic controlling my type 2 with diet) but I can't say it wasn't a partial influence. This looks simple and tasty for something easy on the go as well. Refreshing
With how much Koreans love pork belly and green onions I'm surprised i haven't seen Koreans do this.

It is called "Mangia e bevi" in Palermo, which means "Eat and drink" because when you bite it you have the crunchy pork belly (Eat) and the watery cooked onion (drink)

Interesting. Korean bbq pork belly ALWAYS served with spring onion salad. Some combos are just international in nature.
