never thought to low n slow these…we always grill them at extreme heat and turn out amazing. but these look great!
Pork steaks are amazing and cheap. You can feed a monster sized family with them without breaking the bank. When that fat renders down and gets a little charred, mixed with the caramelized BBQ sauce? Shoooooo boy, that's some good eatin.

Great color! so you wrapped and a hour and a half, And saucing was 15 mins per side so you're at 2hrs. How long were they in the wrap?

So far it’s my favorite sauce.
I use it for a dipping sauce quite often. It does what I called “gums up” on the grill really well gets nice and sticky!!

Hey Rus you did a great job with the pork steaks and wrapping them up is a nice technique as well. But here's a technique that my uncle used to do and I'm sure if you tried you'll like it he took a a disposable aluminum pan and he filled it with the mop sauce or barbecue sauce and he placed the pork steaks in that while I was on the grill and let it braids in there to get tender then before serving he took it out and sealed it on top of the grill you need to try that

Good looking steaks Rus. I cut mine a little thicker because I have overcooked the thin ones. Because I was not paying close enough attention. Armature move.

Looks a bit tough/over cooked when you picked them up. How was the tenderness?
When I cant find them pre-cut, I ask my butcher to cut a few to 2" and if I have company, 3-4" depending. Another way to make these is, go with the medium to Thin cut, brown on both sides and throw them into a baking pan and cover with cream of celery and or cream of mushroom. Pork steaks are awesome. Very versatile. Russ, can you describe the moppy sauce that you used here… I am looking for something different for when I am throwing a Butt on the pit

Rus, I have those same products and they are outstanding. Those pork steaks turned out great.
I've used pork steaks doing hot and fast "thit nuong" Vietnamese grilled pork. Works pretty well if you get a better deal on them vs thin cut chops.
So uncovered for 1.5 ish hours until color you want or starting to look dry.
Then wrap.
