-Beef chuck 450g
-Salt 1/2tsp (3g)
-Black pepper
-Water 3tbsp (45ml)

-Onion 350g (measured as skin on)
-Carrot 150g (measured as skin on)
-Potato 150g (measured as skin on)

-Water 400ml
-Kombu 4g (Or MSG 2g)
-Japanese curry roux 45g

  2. If you only using rice cooker and doesn't have the keep warm rice cooker, you can soak the pieces of meat in baking soda first for 20-30 minutes, then rinse the meat, dry with tissue. then just follow the cooking method here, without extra keep warm time. I'm sure you get the tender meat..

  3. OK, I'm totally going to try this in an Instant Pot pressure cooker. Love the assorted GunPla.

    1:30 We usually say, "Don't crowd the pan, you will trap steam which will inhibit browning."
    Some recipes (notably Cook's Illustrated) will have the cook heat the oil until it's just smoking so the cold meat won't drop the temperature of the pan too much.

    I tend to use rice wine (日本酒) for deglazing the pan.

  4. Golden Curry is the best! I swear, you could make this with shoe leather and it would be just as tasty! Found Golden Curry while stationed in Hawaii in the navy fifty plus years ago and have made it here in the mid-west since then. Great video: thanks much!
