The only "rule" that I saw got broken was using the milk and water combination instead of the traditional water and draining method. But that's less of a rule break and more of a class one-pot recipe method. And the mustard making it cheesier and American cheese making it smoother are pretty well-known tricks at this point. The best American cheese to get is fresh from the deli counter in my experience. I mean, these are still good tips though

That water was entirely unnecessary. I make stewed macaroni by cooking using only full fat milk, no water, and if you're careful enough and keep stirring it won't burn at all.
That’s food science. No curdled cheese. I think protein and calcium are around the same.

I miss the old mac and cheese days when breaking the rules meant breaking the blue box instructions and adding additional ingredients. Those were simpler days.
