Amazing channel! Are you aware that your calculation is wrong. You need to calculate 25% of the meet. You ended up with 85.4% meet and 16.6% fat.

Your math is off. You need 2.75 lb of fat to make an 80/20 mixture with 11 lb meat. (0.8 x 13.75 = 11)
