INGREDIENTS WITH GRAM AMOUNTS
2 12 ounces New York strip steaks – trimmed and removed from fridge 1-2 hours before
3 tablespoons black peppercorns – coarsely crushed
2 teaspoons kosher salt
2 tablespoons vegetable oil
1/3 cup cognac or brandy
1 cup heavy cream
1 tablespoon unsalted butter – cold
1 medium shallot – minced
1 tablespoon green peppercorns – optional

You can get green peppercorn from Chinese store, sometimes called sichuan peppercorn (green).
FYI, cut steaks from Costco are Blade Tenderized! Big No No!!!

Suggestion…as a lot of us do when we grill outside, you can brush a thin coat of olive oil on the surface of the steak as a binder to hold the pepper better.

Use a mortar and pestle for the peppercorns. Or one blitz with a mini-grinder. Easy.

I'm going to combine your recipe and Chef Jean's for the ultimate dish! The biggest difference is he uses less cream, and reduces a home-made beef stock. Your biggest difference is sautéing shallots which I think is an excellent idea.
Hennessy has a higher concentration of alcohol and will burn cleaner than a cheap brandy. 🥃
Idk, but I loathe pepper crusted anything. The pepper gets in between your teeth and for hours after when you lick the tooth you get that uncomfortable spicy pepper flavor.

This is my all time fav meal and I'm excited to try your recipe! I have a question; i have some serious health problems and eating a ton of butter can really bother me. If I wanted to cut down the amount of butter used, could I use just a tiny bit of cornstarch to thicken the sauce instead?

Thankyou so much, I used to have this dish once when I was in a casino in London, it was great, after all those years I could find any recipe similar, I wasn’t the one who order food, my mate did it, they call it popcorn steak, that’s why I couldn’t find it I think, definitely gonna subscribe u mate
