Ingredients:
3/4 cup brown sugar (packed)
1/2 cup granulated sugar
3/4 cup neutral oil (I use avocado oil)
3 large eggs (about 50 g each)
1/2 cup sourdough discard
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 1/2 cups chopped pecans

Directions:
-Preheat an oven to 350 F (175 C). Grease a 9X13 baking dish.
-In a large mixing bowl, beat the sugars and the oil with a handheld mixer until the sugar is well-coated by the oil.
-Add the eggs. Mix well.
-Next, beat in the sourdough discard, and then the vanilla (one at a time), until incorporated.
-In a separate, small bowl, whisk together the flour, baking powder, and salt.
-Fold the dry ingredients into the wet mixture.
-Stir in the chopped pecans.
-Spread the mixture evenly into the greased baking pan.
-Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
-Cool completely before cutting.
