You shouldn't have to probe all the way to the middle of the steak, if the probe goes in about as far as however thick your steak is then it shouldn't be more than a couple degrees off the temperature dead center and you're impaling your steak a lot less.
OMG this is my new way to cook the different cuts of meats. Love strip steaks, porterhouse and T-bone. Looking forwards to cooking this way. I love a side of cooked mushrooms in butter, Mmm
